Easy Coconut
Chocolate
Makes one tray
Takes only 15 minutes
Ingredients:
500g shredded coconut
3 tbsp cacao powder
3/4 cup pistachios shelled
1 cup berries
Method:
Line a tray with grease proof baking paper.
Sprinkle nuts and berries evenly on the tray.
Place the shredded coconut and cacao in a food processor and blend on high until it turns to liquid.
Pour coconut chocolate mixture evenly over nuts and berries.
Put the tray in the refrigerator or freezer and leave until set.
Once the chocolate has set, break into pieces and enjoy!
Tip: You can use any berries or nuts you like or get creative and experiment with different flavors like choc orange, chili, sea salt or pineapple. What ever floats your boat!
Paleo Soup
Serves 8
Prep time 10 min
Cooking time 20 min
Ingredients:
2 Pieces of fresh ginger the size of a thumb, crushed.
1 Clove of garlic crushed
1 onion chopped
1/2 large red chilly finely chopped
2 sweet potatoes chopped
2 carrots chopped
1/2 cauliflower chopped
1/3 cup homemade vegetable stock
Pinch of salt & Black pepper
Tsp curry powder
2-3cups water
Method:
Sauté onion, garlic, ginger and chilly.
Add remaining ingredients and boil for 20min.
Pour into a food processor a blend till smooth and creamy.
Serve with a dollop of coconut cream and or finely chopped spring onions.
Tips: Add more water for a runnier consistency and less for a thick creamy soup. Crush your ginger in a garlic crusher.
Bolognaise Sauce
Serves 6-8
Prep time 5-10 min
Cooking time 20-30 min
Ingredients:
1 large onion finely chopped
2 cloves of garlic crushed
1/2 of a red chilly finely chopped
1kg beef mince
1 1/2 cups of chopped mushrooms
3/4 cup of cherry tomatoes halved
1 tin of diced tomatoes
1 cup of tomato passata
1/2 cup water
1/4 cup tomato paste
1/4 cup homemade vegetable stock
1 cup chopped basil
Salt and pepper to taste
Method:
Sauté onion, garlic and chilly in a large pot until soft, then add the mince and stir until browned.
Stir in mushrooms and all other ingredients.
Bring to the boil and simmer for 20-30 minutes or until your ready to eat.
Tip: When purchasing the tomato products look for ones that only contain tomatoes and salt. Most brands contain sugar, thickeners and preservatives. The passata I used contained only tomatoes and basil.
Paleo Fig and
Apple Crumble
Serves 4-6
Prep time 20 minutes
Cooking time 20-25 minutes
Ingredients:
2 cups of chopped fresh figs
3-4 cups of chunky stewed apples
2-3 cups of Almond flour
1/3 cup of Ghee melted
1 Tbsp of Cinnamon
Method:
Pre heat oven to 180 degrees.
In a medium sized baking dish, mix together your figs and apple.
In a large bowl, combine the remaining ingredients. Use your hands to mix it all together really well.
Sprinkle the crumble evenly over fig and apple mixture.
Bake for 20-25 minutes or until golden and crispy on top.
Tip: Make sure you have lots of people to share with, or you might not be able to help but eat it all yourself!
No Flour, No Potato
Serves 4
Prep time 20 minutes
Cooking time 20-25 minutes
Ingredients:
1 peeled and cooked sweet potato
1 1/4 cups of almond flour
1/4 psyllium husks
1 tsp salt
2 tbsp olive oil
1 egg
Generous tsp baking powder
Steamed florets of half a cauliflower
Method:
In a food
processor, blend cauliflower and sweet potato until smooth. Gradually
add almond flour and psyllium husks. Add the rest of the ingredients
and process until doughy. Refrigerate until cold.
Sprinkle
either almond or coconut flour on a smooth clean bench space. Knead
some of the flour into the dough and then separate it into
manageable portions (about a handful).
Roll into long snakes and then
chop around 3cm lengths. Place these nuggets on a tray not touching each
other and freeze completely.
Bake for 20 to 25 minutes at 180C or until
fluffy inside. To serve drizzle with olive oil or any other oil
you like (I used macadamia nut oil) then voila! Beautiful golden puffy
delights!
Tip: Make sure you use plenty of almond or coconut flour to dust the surface you're rolling the gnocchi on or it will stick!
Super Simple
and Delicious
Makes 10-12 medium muffins
Prep time 5-10 minutes
Cooking time 15-20 minutes
Ingredients:
2 cups of frozen blackberries
2 medium bananas
2 cups of coconut flour
1/2 cup water
1 1/2 tbsp coconut oil
4 eggs
Method:
Preheat oven to 180C and prepare a muffin tin.
Melt coconut oil in water on stove or in microwave (takes roughly 1min 30s).
Blend coconut flour, bananas, eggs, oil and water.
Stir in frozen berries. Pour into muffin tin and bake for 15-20 minutes or until golden brown.
Tip:
Any berries or fruit can be substituted for the blackberries. I used fresh figs in one batch and they were really good too!
Perfectly Every Time
My method, the way my mummy showed me.
Half fill a small saucepan with water and a splash of white vinegar.
Bring to the boil then bring back to medium/high so that the water is still bubbling but only gently.
Crack your egg into a cup first and then slide it into the water.
Take it out with a slotted spoon after 3-4 minutes or when it doesn't fall apart when you try and scoop it out.
